Produces a flavorful brisket with the perfect "bark", and great burnt-ends.Trim brisket, cover liberally with seasoning & refrigerate 4+ hrs. Place on indirect grill or in smoker, fat side down. Cook at 225 degrees (consult your smoker directions) for approx 4 hrs or until tender (depends on size and cut of meat), then place in foil and return to grill for another hr.
